Barrel-Aged Old English Ale

Yeast:

    1 package – Dry English Ale (white labs, WLP007)

 

Mash:

    14 lb – Maric Otter

    2 lb 8 oz – Munich Malt

    8 oz – Special B Malt

 

Hops:

    1.2 oz Target (boil 56 min)

    0.4 oz Fuggles (boil 32 min)

    0.24 oz East Kent Goldings (boil 29 min)

 

Notes:

    Mash for 60 minutes at 149°F with 6 gallons of water,then boil for 2 hours.  This is for a low mash efficiency of about 53%

    Make a 1.5 liter starter for the yeast, this is a “big” beer and will require a lot of yeast

    We left the beer in the primary fermenter for a few weeks and then moved into a 5 gallon homebrew keg to cold condition the beer.  This allowed the yeast to settle out before moving into the barrel.

    After cold conditioning we moved the beer into the barrel and let it age for 8 weeks.

    The last step is putting it back into a keg to carbonate and store. 


 

Sweet Whiskey (1-liter oak barrel)

    1/2-liter - Bourbon or Whiskey

    1/2-liter - Jagermeister

 

Age the Bourbon or Whiskey in the barrel for roughly 2 months.  Remove and set aside.  Next, age the Jagemeister in the same barrel for an additional 1-2 months.  Add the Bourbon or Whiskey back into the barrel with the Jagermeister and age anadditional 1-2 months.


 

Honey Whiskey (1-liter oak barrel)

    1-liter - Bourbon or Whiskey

    1 cup - Honey

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve over ice.


 

Tequila with Vanilla (1-liter oak barrel)

    30 oz. - Tequila Resposado

    1 ea. - Coffee Bean

    2 ea. - Vanilla Beans (cut in half)

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve straight.


 

Tequila Negroni (2-liter oak barrel)

    20 oz. - Tequila (Blanco)

    20 oz. - Aperol

    10 oz. - Sweet Vermouth

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve over ice with a lemon peel garnish.


 

Barrel Aged Martini (2-liter oak barrel)

    45 oz. - Vodka

    15 oz. - Dry Vermouth

    1 1/2 tsp. - Whole Peppercorns

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve stirred and strained into a martini glass.


 

Barrel Aged Manhattan (1-liter oak barrel)

    25 oz. - Rye Whiskey

    7 oz. - Sweet Vermouth

    2 oz. - Angostura Bitters

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve over ice with Maraschino Cherry garnish.


 

Negroni (1-liter oak barrel)

    12 oz. - Dry Gin

    12 oz. - Campari

    12 oz. - Sweet Vermouth

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve over ice with an orange twist.


 

Trident (1-liter oak barrel)

    12 oz. - Aquavit

    12 oz. - Dry Sherry

    12 oz. - Cynar

    1/2 oz. - Peach Bitters

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve stirred and strained into a martini glass.


 

Aged White Hook (1-liter oak barrel)

    19 oz. - White Whiskey

    9 oz. - Sweet Vermouth

    5 oz. - Maraschino Liqueur

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve stirred and strained into a martini glass.


 

Oak Aged Newark (1-liter oak barrel)

    19 oz. - Applejack

    9 oz. - Sweet Vermouth

    2.5 oz. - Fernet-Branca

    2.5 oz. - Maraschino Liqueur

 

Mix all of the ingredients together in a seperate container.  Add to barrel and age to taste. Serve stirred and strained into a martini glass.
